Mary Lester's Rhubarb Pie

Mary Lester has graciously shared her favourite Rhubarb Pie recipe with us. A family favourite in the Lester house, this pie is sure to make a few fans in your house as well! 

Pie Crust Ingredients

  • 1 1/2 cup flour
  • 1/3 cup oil
  • 2 tablespoons milk

Pie Crust Instructions

Mix flour, oil, and milk with fork. Place mixture in pie pan, and spread out evenly within the pan. (I chilled my pie crust for 15 to 20 minutes while I prepared the filling).

Pie Filling Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 tablespoon vanilla
  • 1/2 cup flour
  • 2 tablespoons melted butter
  • 3 cups rhubarb 
  • 1 tablespoon cinnamon

Pie Filling Instructions

In medium sized mixing bowl, combine 3 eggs, 1 and 1/2 cups sugar, and 1 tablespoon of vanilla. Beat well. Then mix in 1/2 cup of flour, 2 tablespoons of melted butter, 3 cups of rhubarb, and 1 tablespoon of cinnamon. 

Bake at 375 F until the rhubarb is tender and top is golden brown.
