Broccoli Cheese Soup

Broccoli Cheese Soup
Ingredients:
- 4 Heads of Broccoli, Chopped
- 2 Large Carrots, Grated
- 1 1/2 Cups of Water
- 1/2 Cup of Butter
- 1 TBSP Olive Oil
- 3 Cloves of Garlic, Minced
- 1 White Onion, Chopped
- 2 Cups of Whole Mllk
- 1 Cup of Skim MIlk
- 2 Cups of Shredded Cheddar Cheese
- 2 Cups of Shredded Swiss Cheese
- 1 TSP Red Pepper Flakes
- 1 TSP Oregano
- 1 Pinch of Salt
- 1 TSP Pepper
Directions:
- Add Water, Broccoli and Carrot to a large pot over medium heat. Cover and let steam for 10 minutes.
- In a separate pot, add the Olive Oil, Onion, and Garlic. Let simmer on low until fragrant (about 10 minutes).
- Add the Milk, Cheese and Spices to the pot.
- Uncover the Broccoli carrot mixture and add 1/2 cup of butter. Stir until dissolved.
- Using and immersion blender (or placing into a regular blender), blend the broccoli mixture. Add water as sparingly as needed.
- Add the cheese mixture to the broccoli mixture. Stir well.
- Let simmer for 3 minutes.
