Broccoli Cheese Soup

Cold weather calls for delicious soup! What if I told you that you could make this delicious soup in twenty minutes or less! Don't believe me? Try it for yourself today!

Broccoli Cheese Soup

Ingredients:

  • 4 Heads of Broccoli, Chopped 
  • 2 Large Carrots, Grated
  • 1 1/2 Cups of Water
  • 1/2 Cup of Butter
  • 1 TBSP Olive Oil
  • 3 Cloves of Garlic, Minced
  • 1 White Onion, Chopped
  • 2 Cups of Whole Mllk
  • 1 Cup of Skim MIlk
  • 2 Cups of Shredded Cheddar Cheese
  • 2 Cups of Shredded Swiss Cheese
  • 1 TSP Red Pepper Flakes
  • 1 TSP Oregano
  • 1 Pinch of Salt
  • 1 TSP Pepper

Directions:

  1. Add Water, Broccoli and Carrot to a large pot over medium heat. Cover and let steam for 10 minutes.
  2. In a separate pot, add the Olive Oil, Onion, and Garlic. Let simmer on low until fragrant (about 10 minutes).
  3. Add the Milk, Cheese and Spices to the pot. 
  4. Uncover the Broccoli carrot mixture and add 1/2 cup of butter. Stir until dissolved. 
  5. Using and immersion blender (or placing into a regular blender), blend the broccoli mixture. Add water as sparingly as needed. 
  6. Add the cheese mixture to the broccoli mixture. Stir well.
  7. Let simmer for 3 minutes.
