Potato Leek Soup

It’s soup season at the farm! This hearty soup is exactly what you need to drive the cold, fall air away. Drop by to pick up your ingredients for this delicious soup today. Potato Leek Soup

Ingredients:

  • 3LB Yukon Gold Potatoes

  • 5 Leeks

  • 1 Whole Garlic

  • 1 Spanish Onion

  • 5 Cups of Vegetable Broth

  • 3 Bay Leaves

  • 2 TBSP Pepper

Directions:

  1. Wash and cut up all veggies.

  2. Preheat oven to 350 and roast the garlic in the oven for 10 minutes. Set aside.

  3. Add the onion to the pot and let simmer for 5 minutes.

  4. Add broth to the pot and bring the Broth to a boil.

  5. Wash and cut up all veggies and add the potatoes and leeks to the boiling broth.

  6. Let boil for 15-20 minutes or until potatoes are soft. Add everything but the bay leaves and let simmer for 3 minutes.

  7. Using an immersion blender (or a regular blender) carefully blend the mixture until smooth.

  8. Add the bay leaves and let simmer for another 10 minutes.
