Easy Refrigerator Pickles
Ingredients
· 1 1/2 cups water
· 3 tablespoons white vinegar
· 1 1/2 tablespoons kosher or pickling salt*
· 2 teaspoons black peppercorns
· 5 cloves garlic, peeled
· 6 large sprigs fresh dill
· 1 bay leaf
· 2 Large English cucumbers, Sliced
· (optional) 1/2 teaspoon crushed red pepper flakes, or more/less to taste
Directions:
Over medium heat, boil the water, vinegar, salt, and spices to create a brine.
Using new, clean mason jars, stuff the jars with the sliced pickles. During this stage you can also add any extra spices that you wish. I added extra dill and red pepper flakes.
Distribute the brine evenly among the jars, and place the lids on the jars.
Refrigerate for at least 2 days and enjoy!
