Local Meatball and Mushroom Stir Fry

Try this tasty new recipe at home and give these local ingredients a try, you won’t be disappointed!

Ingredients:

  • 1 Spanish Onion

  • 1 TBSP Garlic, Minced

  • 1 Package of Meatballs, halved

  • 1/2 LB Oyster Mushrooms

  • 5 Carrots

  • 2 Parsnip

  • 2 Tomatoes, halved

  • 1 TSP Salt

  • 1 TBSP Pepper

  • 1 Cup of Rice, prepared as directed

Directions:

  1. In a large pan, add oil, onions, and meatballs. Cook on medium heat until meatballs are cooked thoroughly.

  2. Add the carrots, parsnip, tomatoes and mushrooms. Cover and turn the heat to low. Leave covered for 10-12 minutes.

  3. Prepare rice as directed.

  4. Add spices to the large pan and stir the mixture. If the mixture is too thick you may need to add water. Let simmer for another 5-7 minutes or until the carrots are soft.
