Cream of Green Soup

Ingredients:
3 Cups of Water
1 TSP Salt
1 TBSP Pepper
8 Large Tomatoes, Stems Removed
1 Cup of Cherry Tomatoes, Stems Removed
.2 Cups Basil
2 Cups of Pak Choy, Chopped
1 Cup of Broccoli, Chopped
2 Cups of Spinach
2 Cups of Whole Milk
2 TBSP Butter
2 Large Onions, Minced
1/2 Cup Garlic Scapes, Chopped
Directions:
Bring water to boil in a large pot and add salt, pepper, and tomatoes. Let boil for 12-15 minutes.
Turn the heat to medium and add the basil, pak choy, broccoli and spinach. Cover and let sit on medium heat for 15-20 minutes.
In a separate pan on medium heat, add the butter, onions and garlic scapes. Let the ingredients simmer until the onions become translucent.
Add the onions and garlic scapes to the pot. Remove pot from direct heat.
Add milk to the soup mixture.
Using an immersion blender, cream all the ingredients together until smooth.
Return pot to low heat and let simmer for 5—10 minutes.
