Cranberry Holiday Cake

The perfect amount of tart and sweet! Great for the holidays.

Ingredients:

  • 3 large eggs room temp

  • 2 cups sugar

  • 3/4 cup unsalted butter softened

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 2 cups all-purpose flour

  • 2 cups fresh cranberries (can use frozen as well)

  • Powdered sugar for garnish (not necessary)

Instructions:

Preheat oven to 350 degrees, prep a 9x13 pan with a non stick baking spray. Beat the eggs and sugar together until thick and light in color. Add the butter, almond and vanilla extract to mixture and continue to mix. Add the flour slowly until just combined. Fold in the fresh cranberries. Pour mixture into pan and bake for about 45 minutes. Let cool completely until cutting into squares, garnish with powdered sugar if desired. Enjoy!
