Roasted Eggplant Dip
Make and enjoy your own baba ghanoush with our eggplant! Top it off by dipping our fresh veggies into it.
3 medium eggplant*
Sea salt
Olive oil (for roasting)
1/4 cup fresh lemon juice
1 large clove garlic (grated or roasted)
2 Tbsp tahini
1 Tbsp Cumin
2 Tbsp fresh cilantro, parsley or basil (optional)
Cut eggplant lengthwise, brush with oil, roast on a cookie sheet until fork tender.
Scoop out and put in a food processor or blender with remaining ingredients.
Serve with fresh veggies or crackers.
