Strawberry Rhubarb Bundt Cake

When strawberries AND rhubarb are in season, you make the most delicious cake.

Strawberry Rhubarb Mix:

  • 1 1/2 cup chopped rhubarb

  • 1/2 cup chopped fresh strawberries

  • 1/2 tsp cinnamon

  • 1/4 cup granulated sugar

Vanilla Cake:

  • 1/2 cup butter

  • 1/2 cup sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 cups flour

  • 4 tsp baking powder

  • 3/4 cup plain greek yogurt

  • 1/4 cup milk

Directions

Preheat your oven to 350 degrees, spray your pan with a flour based oil (or you can also line the bottom with parchment paper). Combine and set aside the strawberry, rhubarb, cinnamon, and sugar. Then, in a separate bowl mix together the butter and sugar, add one egg at a time. Then add your vanilla. In another separate bowl, mix together your flour and baking powder. Add your milk and yogurt to the butter and sugar mix. Put clumps of the cake batter around the bottom of the pan, followed with the strawberry rhubarb mixture, and repeat until finished. Bake for 45 minutes, let cool in the pan for 10, and then flip on to plate. Enjoy as is, or with a scoop of ice cream!
