Zucchini Carrot Fritters
Need a way to get your kids to eat some more veggies? These zucchini carrot fritters are easy to make and are Lester kid approved.
Ingredients:
1/4 cup shredded zucchini
1/4 cup shredded carrot
Fresh herbs and green onion to preferred taste
1 egg
1/4 cup milk of choice
1/2 cup flour
1/4 cup of cheese if desired
Directions:
Preheat oven to 350 degrees. Shred your zucchini and carrot, finely chop your herbs and green onion. Mix your egg and milk together in a bowl, once combined add your shredded and chopped veggies. Next, add in your flour making sure it’s well incorporated. Then add your cheese, folding it in. Cover a baking sheet with parchment paper. Spoon out the mixture onto the parchment paper. Bake for 12-15 minutes or until the edges brown up a little. Best of all, these can be stored in your fridge for 4 days and you can also freeze them for up to 3 months!
