Tomato Zucchini Eggplant Bake
Farm fresh ingredients baked with cheese is the perfect summer side dish!
Ingredients:
1 eggplant
1 medium zucchini
2 small- medium tomatoes
1-2 cups of cheese of your choice (gruyere and asiago used in picture)
Olive Oil
Directions:
Slice zucchini and eggplant and grill in pan with olive oil (can also layer raw instead of grilling). Slice tomato thinly. Next, layer ingredients in a deep baking dish adding cheese as a layer as desired. Bake at 350 for about 25 minutes.
