Rhubarb Squares
These squares were a hit at our food testing! Try making them yourself at home using some farm fresh rhubarb from Lester's Farm Market!
For the crust
- 1 and ½ cups flour
- 1/2 cup sugar
- ¾ cup cold butter, cubed
- 1 tsp Cinnamon
- Zest of one lemon
- 1 tbsp lemon juice
For the filling
- 3 large eggs
- 1 1/2 cups white sugar
- ½ cup flour
- ½ tsp salt
- 4 cups rhubarb, diced
- Zest of 1 lemon
Directions
- Preheat oven to 350 degrees.
- Combine the sugar and butter in a bowl. Add the lemon zest, cinnamon and flour to the mixture.
- Press the crust into a 9 inch square baking pan. Bake the crust for 10-12 minutes.
- While the crust is cooking, combine ingredients for the filling in a large bowl. Gently stir in the diced rhubarb. Pour the rhubarb mixture into the hot crust and place in oven.
- Bake for 30-35 min or until the filling is set.
- Let cool for 1 hour and cut into bars.
