Strawberry Oatmeal Crumble Bars

These crumble bars are packed full of delicious Lester's strawberries with a delicious oat base. The best part about this recipe is that it is simple and quick. 10 Minutes and 1 bowl is all you need to whip these bars up, then the hardest part begins- waiting 40 minutes for them to bake!
Strawberry Oatmeal Crumble Bars
Ingredients:
- 1 1/4 Cups of Oats (I used minute oats)
- 1 Cup of Flour
- 1/2 Cup of Dark Brown Sugar
- 1 TSP Ground Ginger
- 1 TSP Lemon Zest
- 1/2 cup Butter, Melted
- 2 Cups of Lester's Farm Market Strawberries, Sliced
- 1 TSP Cornstarch
- 1 TSP Lemon Juice
(Glaze)
- 1/2 Cup Powdered Sugar
- 1 TBSP Vanilla Extract
- 2 TBSP Milk
Directions:
- Preheat oven to 375.
- In a bowl, combine Oats, Flour, Dark Brown Sugar, Ginger, and Lemon Zest. Add the melted butter to the mixture and combine until it has a crumbly consistency.
- Save 1/2 cup of the crumble mixture for the top. Press the remaining mixture into the bottom of a 8x8 pan lined with parchement paper.
- Roll 1 cup of strawberries in cornflour and spread them evenly over the base.
- Sprinkle lemon juice over top the the berries.
- Add the rest of the Strawberries on top.
- Add the crumble mixture on top of the Strawberries.
- Bake for 35-40 minutes.
- Remove from the oven and add the glaze over the top.
- Let cool, cut, and serve!
