Fresh Summer Rolls with Peanut Dipping Sauce

Looking for a light lunch or a different and easy appetizer for that family get together? Look no further. This recipe combines some of our favourite farm fresh veggies into one cute little grab and go roll!

Fresh Summer Rolls with Peanut Dipping Sauce

Ingredients:

  • 1 Tomato
  • 3 Carrots
  • 1 English Cucumber
  • 1 Yellow Zucchini
  • 1 Head of Cauliflower
  • 1 Head of Red Cabbage
  • 1 Large Candy Cane Beet
  • 3 Stalks of Swiss Chard
  • 1 Cup of Spinach
  • 1 Package of Spring Roll Rice Paper Wrappers

(Sauce)

  • 1/4 Cup Smooth peanut butter
  • 1 TBSP sriracha sauce
  • 1 TBSP Soy Sauce
  • 1 TSP Minced Garlic
  • 1 TSP Oyster Sauce
  • 2 TBSP Warm Water

Directions:

  1. Prepare the Dipping sauce by mixing all ingredients in a bowl.
  2. Wash and finely julienne all veggies and place on a board. You can leave the peel on all veggies but the beet, or you can peel them all. It is completely up to you! Ensure you chop the Red cabbage, Spinach, and the leaves of the Swiss Chard well (you can use both the stalk and the leaves of the Swiss Chard in this recipe!)
  3. Take one Wrapper and soak it in warm water for 15 seconds. Lay flat and quickly pat dry with a paper towel.
  4. Fill the wrapper  generously with veggies and roll like a burrito. Repeat steps until you have achieved the amount of wraps you are looking for.
  5. Cut in half and enjoy with dipping sauce!
