Double Chocolate Zucchini Beet Muffins

 I know what you're thinking. Beet does NOT belong with chocolate or in muffins. But trust me when I say that beets add nutrition, moisture and flavor to these muffins. Beets are high in Vitamin A, K, Folate and Fibre, so why not try out these delicious muffins today?

Double Chocolate Zucchini Beet Muffins

Ingredients:

  • 2 Eggs
  • 1/2 Cup of Packed Brown sugar
  • 1/4 Cup of White Sugar
  • 1 TSP Vanilla
  • 1/2 Cup of Vegetable Oil
  • 1 TSP Baking Soda
  • 1/2 TSP Baking Powder
  • 1/2 Cup Cocoa Powder
  • 1 Cup of Zucchini, Shredded
  • 1 Cup of Beet, Shredded
  • 1 Cup of Flour

Directions:

  1. Preheat oven to 350.
  2. Shred the beet and zucchini and set aside.
  3. Mix the eggs, Sugar, vanilla, and vegetable oil in a bowl.
  4. Add the Baking Soda, Baking Powder, Cocoa Power. 
  5. Add the Zucchini, Beet and Flour. Mix well. 
  6. Place cupcake liners in a pan and fill each until it is 3/4 full.
  7. Bake for 18 minutes
