End of Summer Soup
September is here and all of the veggies at Lester’s Farm Market are in full swing! From broth to bean, this soup is 100% Lester’s Farm Market Veggies!
Ingredients:
6 Large Tomatoes, Green Stems Removed
1/2 Cup Cherry Tomatoes, Green Stems Removed.
2 Cups of Water
1 Tsp Salt
1 TBSP Pepper
1/4 Cup Basil, Finely Chopped
1 Cup of Swiss Chard, Chopped
1 Cup of Black Magic Kale, Chopped.
1 Cup Green Beans, Chopped
1 Cup Snow Peas, Chopped
1 Cup Spinach
1 Cup Snap Peas, Shelled from the Pod
1 Cup Potatoes, Cubed
1 Cup Spanish Onion, Chopped
Directions:
In a large pot boil 2 cups of water. Add the tomatoes and cover the pot. Let boil for 15-20 minutes. Add the basil, salt and pepper.
Remove the pot from heat and Let cool for 5 minutes. Using an immersion blender, blend the tomato mixture until smooth. At this point, if the mixture is too thick you may need to add extra water until it reaches a thick broth consistency.
Add the veggies to the pot and cover for 15-20 minutes on medium heat. Stir occasionally. Check to ensure your potatoes are fully cooked.
Remove from direct heat and serve immediately.
