Sweet Corn Soup

Corn is in full swing at the farm. Have you visited our Corn Maze in our Field of Fun? It is located at our 173 Brookfield Rd Location along with our Harvest Hut, which currently has a “Street Corn” on their menu! There are so many ways to enjoy this veggie, but making this soup at home with farm fresh ingredients is definitely at the top of my list!

Ingredients:

  • 1 Spanish Onion, Chopped

  • 6 Garlic Scapes, Chopped

  • 1 TBSP Butter

  • 1 Full Garlic, Minced (2 TBSP)

  • 6 Ears of Sweet Corn, Corn Removed from Cobs

  • 1 Cup of Water

  • 4 Cups Chicken Stock

  • 2 Cups of 2% Milk

  • 1/4 Cup Corn Starch

  • 2 Cups Celery, Chopped

  • 5 Large Carrots, Chopped

  • 8 Medium Potatoes, Cubed

  • 1 TSP Pepper

Directions:

  1. In a large pot on medium head, add onion, garlic scapes, butter and garlic. Cook until the onions are clear, about 15 minutes.

  2. Add the water, chicken stock , corn (Still on the cob), celery and 4 potatoes to the pot. Bring to a boil and cover for 10 minutes.

  3. Remove the corn and let cool in the fridge. Once it is cooled cut the corn from the cob. Add 3 cobs of corn to the pot immediately, and save 3 cobs for later in the recipe.

  4. Remove the pot from heat and add the milk. Using an immersion blender, blend the mixture until it is smooth.

  5. Add the cornstarch and blend for 2 minutes Return the pot to medium heat.

  6. Add the remaining potatoes, carrot, corn, and pepper.

  7. Let simmer for 10-15 minutes and then turn off the heat, but leave the pot on the burner.
