Lester's Sweet Corn Salsa

Did you know we grow most of the ingredients you need for an amazing salsa? Fresh tomatoes, garlic, corn and peppers are the base for this sassy salsa. Everything always tastes better when its fresh, and this salsa is no exception!

Ingredients:

  • 1 Pablano Pepper (If you would like your salsa a bit more spicy you can also add a jalapeno, Hungarian wax, or cayenne pepper to the mix )

  • 1 Carmen Pepper, Diced

  • 1 Green Bell Pepper, Diced

  • 2 Ears of Corn, Removed from Cob

  • 2 Large Tomatoes, Diced

  • 2 Cups of Cherry Tomatoes, Halved

  • 1 Can of Mixed Beans

  • 4 Cloves of Garlic

  • 1 TBSP Olive Oil.

  • Juice of 1 Lemon

Directions:

  1. In a large saucepan over medium heat, add the olive oil, garlic, and 1 cup of cherry tomatoes. Cover for 10 minutes.

  2. Prepare all peppers, tomatoes and corn and add to a large bowl.

  3. Using a colander, strain any liquid from the beans and let all the water drain off. Add to the bowl.

  4. Remove the saucepan from the heat and add ingredients to a blender. Blend until smooth and add to the bowl.

  5. Add your lemon juice and stir well.
