Winter Salad

This recipe features both our hydroponic lettuce and our micro greens. These days our fields are covered in snow, but that doesn’t stop us from producing the freshest produce. We use our greenhouses to grow over 4 types of lettuce and over 10 types of micro greens!

Ingredients:

  • 1 Head of Oak Leaf Lettuce

  • 2 Carrots, Peeled and grated

  • 1 Package of Lester’s Farm Market #6 Micro Greens

  • 1 Kohlrabi, Thinly Sliced

  • 1 Honeycrisp Apple, thinly sliced

(Dressing)

  • 1/2 Cup Oil

  • 1/2 Cup Vinegar

  • 1/4 Cup Wildflower Honey

  • 1 Garlic Glove, Crushed

  • 1 TBSP Dry Mustard

  • 1/2 Cup Orange Juice

Ingredients:

  1. In a bowl, toss your salad ingredients and set them aside.

  2. In a separate bowl, combine your ingredients for your dressing and let it chill for at least 10 minutes.

  3. Dress your salad and enjoy!

Did you know?

Beet microgreens have high levels of Vitamin B6, Vitamin C, Folate, and the minerals copper, iron, magnesium, manganese, and potassium. They also contain thiamine, riboflavin, zinc as well and beta carotenes. If you don’t like the taste of beets, this can be a great way to add these vitamins and minerals to your diet in a delicious way.
