Carrot Cake Sweet Rolls

Snowy Saturdays are for trips to the farm and delicious, fresh food! Have you ever wanted to make your own cinnamon buns but have no idea where to start? This recipe is a twist on those delicious buns, using our farm fresh carrots!

Ingredients:

(Dough)

  • 1 Cup Milk (2% or higher, warmed)

  • 2/3 Cup Granulated Sugar

  • 1 + 1/2 TBSP Fast Acting Yeast

  • 1/2 Cup Salted Butter, room temperature and cubed

  • 2 Eggs

  • 4 1/2 Cups Flour

(Filling)

  • 1 Can of Sweetened Condensed Milk

  • 2 TBSP Vanilla

  • 2 Cups of Carrot, Shredded

  • 1 TBSP Ginger

  • 1 TBSP + 4 TBSP Cinnamon

  • 4 TBSP Granulated Sugar

  • 2 TBSP Butter, Melted

(Glaze)

  • 1 Cup of Powdered Sugar

  • 1/4 Cup Milk

  • 1 TBSP Vanilla

Directons:

(Dough)

  1. In a bowl, mix your yeast and sugar until they are combined.

  2. Before you add your milk, ensure it is steaming but not boiling. Slowly add the heated milk and whisk for 2 minutes. Your mixture should be foamy.

  3. Add the butter and flour. At this point if you are using a stand mixer you should switch to your dough hook. If you are doing this by hand then you should knead the flour in by hand for the best results.

  4. Combine until it resembles a doughy texture. Do not over knead your dough.

  5. Form your dough into a ball, and cover with a towel.

  6. Leave your dough to proof in a very warm area for 1 hour.

TIP: I find the most effective place to proof my dough is in my oven! Set your temperature as low as it goes, let it heat up fully, then turn off your oven. Place your bowl and towel in the oven and keep the oven door remain fully open for 5 minutes. You can then close the door and let your dough proof on its own!

(Filling)

  1. In a medium saucepan, add the condensed milk, carrots, 1 TTBSP Ginger and 1 TBSP Cinnamon.

  2. Let the mixture simmer for 1 hour on low, stirring occasionally.

(Making Rolls)

  1. Remove your dough ball from the oven, and place on a floured surface.

  2. preheat your oven to 350.

  3. Roll your dough into a rectangular shape.

  4. Brush the entire surface of the dough with butter, then completely coat in your carrot sauce.

  5. Sprinkle with remaining cinnamon sugar mixture and roll your buns!

  6. Slice buns into 1 inch slices and place in a 9x12 casserole dish.

  7. Bake for 24 minutes and remove from oven.

  8. Combine ingredients for the glaze and pour over the hot rolls.

  9. Let them sit for 12 minutes. This is by far the hardest step!
