Jelly Bean Row Carrots

Colorful and tasty, now that’s something everyone can get on board with!

Ingredients:

Rainbow carrots

Olive oil

Optional dressing: Tablespoon of tahini, three tablespoons of yogurt, cumin - mix well.

Directions: Preheat oven to 350 degrees. Place rainbow carrots on a cookie sheet/baking dish. Coat with olive oil and roast until tender (about 30 minutes or so depending on thickness of carrots).

Try it with beet as well!
