Strawberry Lemon Scones

There is nothing better than a fresh, juicy strawberry from Lester's Farm Market. Why not bake those beautiful strawberries into a delicious scone? 

 

Strawberry Lemon Scones

Ingredients:

(For Scones)

  • 2 3/4 Cup Flour
  • 1/2+ 4 TBSP Cup Sugar
  • 1 Teaspoon Salt
  • 1 TSP Cinnamon
  • 2 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • Zest of 1 Lemon
  • 1/2 Cup of Butter (VERY cold, diced)
  • 2 cups of fresh strawberries, diced
  • 2 Eggs
  • 1/2 Cup+ 1 TBSP of Whole Milk

(For Glaze)

  • 4 TBSP Lemon Juice
  • 2 TBSP Whole Milk
  • 1 Cup Icing Sugar

Directions:

  1. Preheat oven to 400.
  2. Combine Flour, 1/2 Cup Sugar, Salt, Baking Powder, Baking Soda, Cinnamon, and Lemon Zest in a bowl. Add the diced butter to the mixture and combine with hands until it resembles a crumbly texture. 
  3. Add the fresh strawberries to the mixture, just barely combining.
  4. In a separate bowl, combine 1 egg, and 1/2 cup of whole milk.
  5. Add the milk/egg mixture to the dry ingredients. Mix until ingredients are just barely combined.
  6. Flour a flat surface, and split the dough in half.
  7. Gently roll the dough into an 6" circle and cut into 8 triangles, similar to the way you would cut a pizza. Repeat with other half of dough. ( NOTE: If you prefer your scones to be smaller, split the dough in 3 parts and roll 4" circles.)
  8. Line a large baking pan with parchment paper. Prepare the egg wash by combining 1 egg and 1 TBSP of milk.
  9. Lay the triangles of dough on the prepared baking sheet and brush with an egg wash. Sprinkle with sugar.
  10. Let bake for 15-17 minutes, or until golden brown. 
  11. Remove from oven and let cool. 
  12. While the scones are cooling, prepare the glaze.
  13. Generously coat the scones with the glaze.
