Zucchini Basil Pasta
Zucchini and Basil are now fresh in our market! Zucchini noodles are a healthy and delicious option for a farm fresh meal.
Zucchini Basil Pasta
Ingredients:
- 2 medium Zucchini
- 1 Cup of Chickpeas
- 1 Spanish Onion, Diced
- 5 Tomatoes, Diced
- 1 Can of Tomato Paste
- 1 TSP Garlic
- 3 Peppers, Diced
- 1 Cup of Basil, Diced
- 1 TBSP Pepper
- 1 TSP Salt
- 1/4 Cup Water (add as needed)
Directions:
- Using a spiral vegetable cutter, spiral the zucchini to make the noodles. Add a pinch of salt and pepper, and set aside.
- Heat up a large pan on medium heat. Add the onions, tomatoes, and garlic. Let simmer for 15 minutes.
- Add the tomato paste, peppers, basil, salt and pepper. Let simmer for 10 minutes, adding water as needed. The sauce should be thick.
- Divide the noodles into 4. In a frying pan, heat the noodles for 10 minutes per section. Ensure to cover the noodles so that they heat thoroughly.
- Drain the noodles.
- Serve immediatly
